Recipes are introduced by Pranee who opened the first Giggling Squid with her husband Andy in their small fishmen's cottage in Brighton 20 year ago.Loosely translated, Sanuk is about making the most out of the everyday – so dive in, don’t be afraid to experiment and ideally enjoy a few giggles along the way. It’s straightforward enough and as Thai ingredients are now very easy to source in the big supermarkets you should have no difficulties in finding them unless it’s the more bespoke ingredients like galangal or Thai Basil.

With a little tweaking and a lot of lemon juice (not in the recipe) I managed to balance out the sweetness and really enjoyed the curry in the end.

One place has turned into many and it’s now a chain of Thai restaurants across the UK and their debut cookbook is an attempt to make their menu accessible to home cooks.
