As a general guide when buying a leg of lamb, allow 300g per adult. So, for example, if you are cooking for four adults, you would need a 1.2 kg large half leg of lamb. Trim any visible fat off the lamb and cut the meat into rough 3cm chunks. Season generously all over with salt and pepper.
